The Perfect Healthy Smash Cake.

Ah, the 1st birthday!  It's a definant cause for a celebration, to throw some glitter into the air and of course, smash a cake.  There's something really special about the first year of life. It encompasses everything that is pure, sweet and magical in this world. I wanted to create a cake that was equally as sweet, pure and magical.  In July, two of our littles here both turned the big O-N-E within a week of another. It was a call for a celebration and of course some cake smashing. I love celebrating these kiddos at any given chance, and what better way to celebrate than with a cake. And by cake I mean, healthy awesomeness. I kept the refined sugars out of this cake and took a more natural route for sugar. KODIAK CAKES Power Cakes mix helped pack in 100% whole grains and protein while keeping the GMOs and preservatives out. I am just slightly obsessed with this brand and use it in a lot of recipes. (DRY)

(WET)

  • 1.5 cups of unsweetened applesauce 

  • 1/3 cup of whole milk (use almond/coconut for vegan)

  • 1/3 cup pure maple syrup 

  • 1 egg (flax egg for vegan)

  • 1 tsp vanilla extract 

Directions: 

  1. Butter and flour cake pans. I used two 5 inch round pans.

  2. Pre heat oven to 350 degrees

  3. Mix dry ingredients separately from wet. Slowly incorporate wet into dry. 

  4. Pour cake batter into greased baking pans.

  5. Place both cakes on middle rack, bake for 15-20 minutes. Ovens vary, start testing around 12 minute mark with toothpick. Once toothpick comes out clean, cakes are done. 

  6. Let cakes cool for 10-15 minutes. Cut each cake in half. 

  7. Layer, frost and decorate!
