Spicy Thai Peanut Noodle Salad

This Spicy Thai Peanut Noodle Salad has been one of my most highly requested recipes this year. With summer around the corner, it's a perfect staple to have with refreshing notes of lime marrying along with the nutty flavors, this incredibly easy to assemble dish features a wonderfully spicy peanut sauce.
This salad is a family favorite and can be easily stored for quick lunch prep during the week. We like to assemble in mason jars, placing the sauce at the bottom, then layering it up with our favorite ingredients. Some of our topping staples are listed in the assembly instructions below.
These flavorful and refreshing concoctions in mason jars are also excellent to travel with. We took this Spicy Thai Peanut Noodle Salad on the airplane with us to Hawaii not only did we guarantee we were eating healthier, but we also saved money. Our flight attendants were so impressed, they wanted in on the grub!


Peanut Sauce:
Ingredients:
● 2 tbsp peanut butter
● 1 tbsp honey
● 2 tbsp sesame oil
● 2 tbsp rice vinegar
● 4 tbsp soy sauce
● 1 tsp grated ginger or 1 drop doTerra ginger essential oil
● 1 clove garlic
● 2 tsp Sriracha or 1 tsp chili flakes
Directions:
Place all ingredients in a blender until well blended and the sauce has a smooth consistency. Add 1-2 tsp of water if you desire a thinner sauce.
Spicy Thai Noodle Salad Assembly:
Layer ingredients in a bowl or mason jar.
● Peanut Sauce
● Cabbage mix of shredded carrots, broccoli and purple cabbage
● Soba Noodles or Banza protein spaghetti noodles
● Shelled edamame
● Sugar snap or snow peas
● Chopped cilantro, thai basil, and green onion.
● Peanuts or Cashews
● Lime wedges
● Grilled chicken or shrimp (optional)
